All I can say is that dinner was yummy! I made chicken bruschetta with asparagus. Very simple yet delicious. All I did was season the chicken and cook until done and while I was cooking the chicken, the asparagus were being steamed. I topped the chicken with homemade bruschetta. Here's what I used:
- 3 vine ripened tomatoes (any will do)
- 1 minced garlic clove
- a handful of chopped basil (no exact measurement for me since I love basil!)
- 1-2 tbsp of extra virgin olive oil (or more)
- salt (to taste)
Mix all ingredients and serve. Great on baguette slices too!
